Healthy Banana Nut Muffins (GF)




Yield 10 Muffins


  1. 1 1/3 cups of GF all purpose flourĀ 
  2. 1 tsp baking powder
  3. 1/2 tsp baking soda
  4. 1 tsp cinnamon
  5. 1/2 tsp of sea salt
  6. 2-3 medium sized ripe bananas
  7. 1 egg
  8. 1/4 cup of dairy free milk
  9. 1/2 tsp of pure vanilla extract
  10. 1/4 cup of pure maple syrup
  11. 1/4 cup of chopped pecans


  1. Preheat oven to 350 degrees F
  2. Spray muffin pan with coconut oil to prevent from sticking
  3. In a medium bowl combine all dry ingredients
  4. In a large bowl mash banana with a whisk until creamy
  5. Mix in remainder of wet ingredients
  6. Slowly fold in dry ingredients into wet until smooth and creamy
  7. Scoop batter into muffin tins and fill 3/4 of the way full then top each muffin with a sprinkling of crushed pecans
  8. Bake for about 23 minutes until tooth pick comes out clean
  9. Allow to cool for 10 minutes & enjoy!!!
