The Very BEST Fall Dessert

HAPPY FRIDAY, I am sharing the BEST Fall treat: Chocolate Chip Cranberry Pumpkin Bars.  These bars are decadent, clean and filled with Fall flavors. I love pairing them with a glass of creamy vanilla almond milk. Every bite you will fall in love more and more with these bars. The combination of pumpkin, dark chocolate and cranberries is beyond. They are so easy to make – and are the perfect dessert for all of your upcoming Fall festivities: Friends-giving, office parties, and halloween parties. Everyone will love them!

Dark Chocolate Cranberry Pumpkin Bars

Ingredients

  1. 1 c. pumpkin puree 
  2. 1/4 c. pure maple syrup
  3. 1/3 c. nut butter
  4. 1 tsp vanilla extract
  5. 2 tbsp almond milk
  6. 3 eggs
  7. 1/2 c. coconut flour
  8. 1 tsp baking soda
  9. 1/2 c. dark chocolate chips
  10. 1/3 c. unsweetened craisins 
  11. dash salt
  12. 1 tsp cinnamon 
  13. 1/2 tsp ginger
  14. 1/4 tsp ground cloves

Instructions

Step 1

Preheat oven to 350 degrees F. Line an 8x8 inch baking pan with nonstick cooking spray

Step 2
Add wet ingredients to a large bowl: pumpkin puree, maple syrup, vanilla extract, nut butter, almond milk and eggs and mix until smooth
Step 3
Add in coconut flour, baking soda, spices, and salt - gently fold. Next add in craisins and dark chocolate chips, fold until well combined.
Step 4 
Spread batter evenly on pan and bake for about 20-25 minutes. While cooling sprinkle on remaining chocolate chips and Enjoy!
