Good Morning!
Friday is among us, today I woke up craving fluffy apple cinnamon muffins. I whipped up these light and healthy gluten free cinnamon apple muffins that are SO yummy. Each bite is completely guilt-free with minimal added sugar. These are so easy to make and are a delicious breakfast idea for a crisp Fall morning.
Top it off with a little grass fed butter or your favorite nut butter and ENJOY.
Healthy Cinnamon Apple Muffins

Yield 7 Muffins
Ingredients
- 1 Red Apple
- 1 tbsp Grass Fed Butter
- 2 tbsp Water
- 2 tbsp Maple Syrup
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1 cup Almond Flour
- 1/4 tsp Baking Soda
- 2 Eggs
- 1 tsp Avocado or Olive Oil
- 1/2 tsp Apple Cider Vinegar
- 1/4 tsp Vanilla Extract
- 1/4 cup Pecans
Instructions
Step 1
Preheat oven to 350 degrees F
Step 2
Line muffin baking sheet with 7 cupcake liners and set aside
Step 3
Heat a small sauce pan to medium heat, add in butter and allow to melt. Next toss in pecans and diced apples, it's okay to keep the skin on. Allow them to cook for about 10 mins, stirring often.
Step 4Â
Turn heat to low and add in water, cinnamon, 1 tbsp maple syrup, and nutmeg. Stir and set aside.
Step 5
In a medium bowl, combine eggs, oil, vanilla extract, remaining maple syrup, and apple cider vinegar, whisk well. Next, add in almond flour and baking soda, stirring until smooth.
Step 6
Fold apples into the batter until fully combined. Add about 1/4 c mixture to each muffin tin.
Step 7
Bake for about 10 minutes and allow to cool! Enjoy 🙂
