Raspberry Chocolate Chip Baked Oat Bars

I absolutely love oatmeal! It is a healthy breakfast option that leaves you feeling energized and prepared to seize the day. Today, I am sharing these incredible raspberry dark chocolate oat bars – a delicious breakfast that is perfect for meal prep.

This recipe is perfect to meal prep and enjoy the next day as an energizing breakfast or pre-workout energy. Top it off with more greek yogurt and nut butter if you wish (I know I always do) & enjoy warm or cold!

Raspberry Chocolate Chip Baked Oat Bars




Yield 9 Servings


  1. 2.5 Cups of Old Fashion Oats
  2. 2 tbsp Chia Seeds
  3. 1 tsp Baking Powder
  4. 2 tsp Cacao
  5. 1.5 tbsp Gluten Free Flour
  6. 1 tsp Cinnamon
  7. 1/4 tsp Sea Salt
  8. 2 Bananas
  9. 1/2 cup of Raspberries 
  10. 1/4 cup of Dark Chocolate Chunks
  11. 1 tsp Vanilla Extract
  12. 1.5 tbsp of Coconut Oil (melted)
  13. 2 cups of Vanilla Almond Milk
  14. 2 Eggs 
  15. 1 tbsp of Pure Maple Syrup
  16. 1/4 cup of Dark Chocolate Chunks


  1. Preheat oven to 350 degrees F. Grease an 9 x 9 inch baking pan with coconut oil.

  2. In a large bowl mix together eggs, mashed bananas, raspberries, chia, maple syrup, almond milk, melted coconut oil and vanilla. Next add in oats, cinnamon and baking powder, cacao and fold until well combined.

  3. Pour mixture into baking pan. Sprinkle the top with extra banana slices, cinnamon and dark chocolate chunks, I used my favorite bar and cut into chunks. Bake for 30 minutes until cooked through. Allow to cool and cut into 9 squares.
